Marukan Zoodles and Tomato Salad
Spiralized zucchini noodles make the perfect base for this colorful and flavorful salad–think pasta salad without all the carbs! It comes together quickly for a light lunch, dinner or easy side.
INSTRUCTIONS
Step 1: Spiralize the zucchini using a spiralizer. Transfer the zucchini noodles to a fine mesh sieve and sit the sieve over a bowl and sprinkle with the salt and toss to combine. Let the noodles sit for 15 minutes. Squeeze the noodles gently to remove any excess liquid and add to a large bowl.
Step 2: Add the tomatoes, bell pepper, peas and corn and toss well to combine.
Step 3: Make the dressing by adding Marukan Genuine Brewed Rice Vinegar, olive oil and mustard powder to a jar and shaking to combine. Drizzle the dressing over the salad and toss to coat everything in the dressing. Garnish with fresh cilantro and enjoy!
Option: For a sweeter tasting dressing, you can use Marukan Seasoned Gourmet Rice Vinegar.
