Marukan Zoodles and Tomato Salad

Spiralized zucchini noodles make the perfect base for this colorful and flavorful salad–think pasta salad without all the carbs! It comes together quickly for a light lunch or easy side.

Medium Zucchinis, spiralized
1/2 tsp
Salt
2 Cups
Cherry Tomatoes, quartered
1/2 Cup
Red Bell Pepper, diced
1/2 Cup
Peas
1/2 Cup
Corn
Dressing:
1/4 Cup
Extra Virgin Olive Oil
1/2 tsp
Mustard powder
Garnish
Cilantro

INSTRUCTIONS

Spiralize the zucchini using a spiralizer. Transfer the zucchini noodles to a fine mesh sieve and sit the sieve over a bowl and sprinkle with the salt and toss to combine. Let the noodles sit for 15 minutes. Squeeze the noodles gently to remove any excess liquid and add to a large bowl. Add the tomatoes, bell pepper, peas and corn and toss well to combine.

Make the dressing by adding Marukan Seasoned Gourmet Rice Vinegar, olive oil and mustard powder to a jar and shaking to combine. Drizzle the dressing over the salad and toss to coat everything in the dressing. Garnish with fresh cilantro and enjoy!
