INSTRUCTIONS

In a medium bowl, combine the 3 Tbsp of rice vinegar, water, ponzu, honey, brown sugar, ginger, sesame oil, garlic and cornstarch. Mix well together. Set aside ¼ cup for glazing after cooking. Add the salmon to the balance of the homemade teriyaki sauce and marinate for 15 minutes to an hour.

While salmon is marinating, cook rice. After cooked, put rice into a non-metal bowl and pour 1/3 cup of rice vinegar evenly over rice and gently fold to combine.

Once salmon is done marinating, heat the grill to medium high heat.

Thread the salmon onto skewers (if using wooden skewers, soak them in water first to avoid burning). Then spray with olive oil. Add the skewers to the preheated grill, and cook for 8-10 minutes, turning often, until the salmon is cooked through. Glaze with remaining teriyaki sauce while cooling and garnish with sesame seeds and green onion.

Serve salmon with cooked rice and fresh cooked broccoli florets. Drizzle Marukan Seasoned Gourmet Rice Vinegar on cooked broccoli for an additional boost of flavor.
