Marukan Instant Pot Pumpkin Soup

This is the perfect soup for the Fall season and you can make it in 30 minutes!

Yellow Onion, cut into chunks

Carrots, cut into chunks
3 Cups
Vegetable Broth
1 (15 oz) Can
Pumpkin Puree
2 tsp
Garlic, minced
1 Cup
Unsweetened Coconut Milk
To Taste
Salt & Pepper
For Garnish
Cilantro
For Garnish
Croutons

INSTRUCTIONS

Place onion, carrots, vegetable broth, Marukan Genuine Brewed Rice Vinegar, pumpkin puree and garlic in Instant Pot®.  Stir to combine.  Seal lid and cook on Manual setting for 8 minutes. Quick release when done. Then pour the soup into a blender and add the coconut milk. Puree until smooth and creamy (if needed, puree in two batches adding half the coconut milk in one batch and the other half in the other). Then, add salt and pepper to taste. Garnish with cilantro and croutons, enjoy!
