Marukan Instant Pot Peanut Chicken

Oil
1 Tbsp
Ginger, grated
1 Tbsp
Garlic, minced
1 Cup
Coconut Milk
1 1/2 lb.
Chicken Breast, cubed
3 Tbsp
Brown Sugar
2 Tbsp
Chili Garlic Sauce, divided
1 Cup
Peanut Butter, smooth
3
Persian Cucumbers, sliced
1 Tbsp
Peanuts, chopped

INSTRUCTIONS

Set Instant Pot to “Saute”. Add oil, ginger, and garlic, and cook until fragrant. Stir in coconut milk. Then add in chicken, Marukan Ponzu Premium Soy Dressing with Sudachi Citrus, Brown Sugar, and chili garlic sauce. Stir. Drop in the peanut butter by the spoonful, and do not mix. Cover Instant Pot, and set to “Manual” for 8 minutes. Meanwhile, cut cucumbers and toss with Marukan Seasoned Gourmet Rice Vinegar and chili garlic sauce. Place it in the fridge.Once the chicken is done cooking, release pressure manually. Set to “Saute” and stir occasionally until it reaches the desired thickness. Serve over rice and garnish with chopped peanuts and cucumber salad. Enjoy!
