Marukan Instant Pot Cashew Chicken

Boneless Skinless Chicken Breast, cubed

Olive Oil

Black Pepper
1/2 tsp
Salt
1/2 Cup
Honey
4 Tbsp
Sweet Chili Sauce
4 Cloves
Garlic, minced
1/2 tsp
Ginger, ground
1
Red Bell Pepper, chopped
3/4 Cup
Cashews
1 Cup
Broccoli Florets
2 Tbsp
Cornstarch
4 Tbsp
Water
2 Cups
Jasmine Rice
For Garnish
Green Onion, chopped
For Garnish
Sesame Seeds

INSTRUCTIONS

Set Instant Pot to “sauté” to heat and add olive oil. Add chicken, salt, and pepper in pot to brown, approximately 3 minutes. Press “off” button. In a bowl, whisk together all sauce ingredients – Marukan Genuine Brewed Rice Vinegar, Marukan Ponzu Premium Soy Dressing with Sudachi Citrus, honey, sweet chili sauce, garlic, and ginger. Add sauce into pot and stir. Close lid and switch to “sealing” setting. Set to “manual” for 3 minutes. After 3 minutes, press “off” button and quick release pressure. Open the Instant Pot and press “sauté” setting. Add bell pepper, cashews, and broccoli. Cook and stir until peppers are tender. Whisk together water and cornstarch. Add mixture and simmer until thickened. Garnish with green onion and sesame seeds. Serve with jasmine rice, enjoy!
