Marukan Fennel and Arugula Salad with Orange Vinaigrette

Our Marukan Fennel and Arugula Salad is bursting with flavor and health benefits!

Salad:
1/3 Cup
Walnut Pieces, toasted
8 Cups
Arugula

Fennel Bulbs, thinly sliced
1
Orange, peeled and sliced crosswise
Orange Vinaigrette Dressing:
1/3 Cup
Orange Juice
1/4 Cup
Extra Virgin Olive Oil
1/4 Cup
Shallot, diced
2 Tbsp
Nutritional Yeast
1 tsp
Dijon Mustard
2 Tbsp
Cilantro, chopped
1 Tbsp
Agave
2 tsp
Flaxseeds
1/8 tsp
Sea Salt
1/8 tsp
Black Pepper

INSTRUCTIONS

Toast walnuts in small, dry frying pan and set aside. Place the vinaigrette ingredients in order listed in a blender and blend until smooth. A small personal blender is a good appliance to have for emulsifying dressings. Place arugula on a salad platter. Arrange shaved fennel over the arugula and top with toasted walnuts and fresh orange slices. Serve with Orange Vinaigrette Dressing.
